Quito: Homestay

Quito is an amazing city and there’s no end to the adventures you can find /create there.  Furthermore, I loved staying with Rosita, the CFHI Local Coordinator.  Plus, staying there was a great way to improve my Spanish!  Both Rosita and her home are highly adapted to seeing students through their experiences in Ecuador.  For instance, the house has tons of rooms.  I stayed in one of the rooms that’s actually located separately from the main living complex.  It has its own bathroom (with a shower) and double size bed.  All the rooms are really comfortable and, overall, the living situation is quite safe: There’s even a guard on duty for the short, gated street Rosita lives on!  Rosita is absolutely wonderful to us students too.  She asks that we all speak Spanish during dinner and will threaten to charge you a penny for every word you say in English.  I would highly recommend you ask her about her collection of duck-themed memorabilia scattered about the house.  It’s a hilarious story.

More important than anything else, however, the homestay is what you make of it.  My group of CFHI volunteers had an absolute blast cooking a meal for Rosita on Valentine’s Day as a sort of role reversal to show our gratitude.  We made macaroni and cheese with squash in it.  We ended up with so many leftovers because the recipe was so huge, we were eating the rest of it all week!  Rico.
